Lemony asparagas by Linda Beers
2 tbs olive oil
1 bunch fresh asparagus
1 tbs lemon juice
Salt and pepper

Rinse asparagus. Break off and compost woody ends then break remaining spears into 2-3 inch pieces. Heat a 12” cast iron pan at medium heat for about a minute. Add olive oil and swish around pan. Add asparagus pieces and lemon juice. Swish around asparagus until covered with oil and juice. Salt and pepper to taste. Cover pan and check doneness about every minute. Test doneness by inserting a fork – this goes fast. Remove from heat and pan immediately when done.

Healthy low calorie buffalo chicken salad by Linda Beers
Olive oil cooking spray
1 1/2lb Boneless chicken breast
Mexican spices/rub
1/2-3/4 cups Fat free plain greek yogurt
Cholula hot sauce
Salad greens
Cherry tomatoes, sliced cucumber, plus any chopped veggies of your choice
Balsamic vinegar salad dressing

Preheat oven to 400°. Line a sheet pan with aluminum foil. Spray the foil, place chicken on foil and spray both sides. Generously shake spices on both sides of chicken. Cook in oven about 20 minutes or until thickest part reaches 165°. Let rest for 15 minutes then chill for at least an hour (can be made ahead of time). Chop chilled chicken into 1/2 inch cubes or shred. Add yogurt until chicken sticks together. Mix in Cholula to taste – I use a lot! Plate with salad greens, any add-ons and dressing. The chicken salad can also be made into a sandwich.

Kodiak Power Cakes chocolate chip cookies1
3/4 cup butter
1 cup brown sugar
1 egg
1 tsp vanilla extract
1 1/2 cups Kodiak mix
1 cup oats
3/4 cup chocolate chips

Preheat oven to 350° F. Cream butter and brown sugar together until smooth. Mix in egg and vanilla. Blend in Kodiak mix and oats. Stir in the chocolate chips. Bake for 9-11 minutes. Makes 24 cookies.
